Laboratory Instructions
- Season chicken with aromatics and herbs; marinate for 1 hour.
- Heat sugar in a heavy-bottomed pot until it bubbles and turns a deep amber brown (the browning process).
- Immediately add chicken to the browning sugar and stir to coat evenly.
- Add rice and pigeon peas, stirring to incorporate all flavors.
- Pour in the coconut milk and water; bring to a boil.
- Reduce heat, cover tightly, and simmer until all liquid is absorbed and the rice is tender.
